A shrub is made by infusing vinegar with fruits, berries, vegetables and herbs. It can then be added to sparkling water and cocktails for refreshing mixers and spritzers.
Grapefruit and Cucumber
2 cups OLIVE & VINE Pink Grapefruit balsamic vinegar
1 medium cucumber, thinly sliced (about 1 cup)
1/2 lemon, thinly sliced
Lemon and Blueberry
2 cups OLIVE & VINE Sicilian Lemon balsamic vinegar
1 cup fresh blueberries, crushed
2 inch sprig fresh thyme (optional)
Peach and Strawberry
2 cups OLIVE & VINE Peach Mist balsamic vinegar
1 cup fresh strawberries, coarsely chopped
Mango and Kiwi
2 cups OLIVE & VINE Tropical Mango balsamic vinegar
1 cup kiwi fruit, peeled and sliced
Place the fruit in a small jar or container. Add the balsamic vinegar and refrigerate for at least one hour or up to four hours. The longer it sits, the more pronounced the flavor of the infusion. Strain and keep refrigerated and covered for up to two months.
To serve, add 1-2 tablespoons of the balsamic shrub (depending on your preference for sweetness) to 8 ounces of chilled sparkling water. Serve over ice if desired.
For an adult beverage, add your favorite spirit, such as vodka, gin or rum.
Makes between 16-32 servings depending on amount added to water or cocktails.
