Kentucky Derby Pie with Bourbon Whipped Cream
For the Pie:
1 cup dark packed brown sugar
1/2 cup light corn syrup
2 tablespoons bourbon
3 tablespoons OLIVE & VINE Chocolate Decadence balsamic vinegar
1/2 teaspoon salt
1/4 cup melted butter
2 cups walnuts or pecan pieces, lightly toasted
3 ounces dark chocolate pieces or semi sweet chocolate morsels
9 inch deep dish unbaked pie crust
1/3 cup pecans or walnuts halves, for decoration
mint sprigs for garnishing, optional
Preheat oven to 400 degrees F.
Beat eggs in a large bowl. Add brown sugar, corn syrup, bourbon, balsamic vinegar, salt and butter. Mix thoroughly.
Sprinkle chopped pecans or walnuts and chocolate pieces in pie shell. Pour egg mixture over nuts and chocolate. Arrange pecan or walnut halves around the edge of pie crust for decoration.
Bake pie on middle rack of oven for 10 minutes. Reduce heat to 325 degrees F and continue baking 25-35 minutes, or until set. Allow to cool to room temperature before slicing and topping with whipped cream. Garnish with mint sprigs if desired.
For the Bourbon Whipped Cream:
1 cup cold heavy cream
3 tablespoons confectioners' sugar
1 tablespoon bourbon
Beat the heavy cream with an electric mixer until it starts to thicken, add confectioners' sugar and bourbon and continue to beat until the consistency of whipped cream.
