Black Bean and Corn Salad
15-ounce can black beans, rinsed and drained
11-ounce can corn, drained (yellow and white blend looks great)
1 large tomato, seeded and diced
2 tablespoons fresh cilantro, chopped
1 large lime, juiced
2 - 3 teaspoons OLIVE & VINE extra virgin olive oil or an infused oil such as Cilantro and Roasted Onion, Persian Lime, Eureka Green Lemon or Meyer Lemon. For a spicy kick, try Tunisian Harissa or Baklouti Chili Pepper oil.
¼ teaspoon cumin
pinch of cayenne pepper
salt and pepper, to taste
1 large ripe avocado, diced
Mix together beans, corn, tomato, cilantro, lime juice, olive oil, cumin and cayenne in a medium bowl. Season with salt and pepper. Just before serving, add avocado and toss gently.
