Watermelon Salad with Serrano Honey Vinaigrette
3 tablespoons OLIVE & VINE Serrano Honey vinegar
2 tablespoons OLIVE & VINE Persian Lime infused olive oil (for a spicier version, try our Baklouti Chili Pepper infused olive oil)
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
about 2 quarts of watermelon cubes, seeded
1/2 of a large red onion, sliced
1/2 cup of feta cheese, cubed or crumbled
1/4 cup of mint, chopped
fresh mint leaves to garnish, optional
In a small bowl, whisk together the vinegar, olive oil, salt and pepper. Set aside.
Combine all the salad ingredients in a large bowl. Pour the dressing over and mix gently to coat. Let the salad rest for about 15 minutes to meld the flavors. Just before serving, give it another good mix and adjust the seasoning to taste. Garnish with mint leaves if desired. Best served chilled.
