Grapes, Mint and Lemon Salad
2 tablespoons OLIVE & VINE Sherry Reserva vinegar
1/4 cup OLIVE & VINE Meyer Lemon or Green Eureka Lemon fused olive oil
sea salt and freshly ground pepper to taste
1 cup seedless green grapes
1 cup seedless red grapes
1/2 cup small cherry or teardrop shaped tomatoes
1 cup fresh mozzarella cut into 1 inch cubes
1 cup pitted kalamata olives
2 tablespoons fresh mint, chopped
1 tablespoon garlic, minced
1 teaspoon grated lemon peel
Combine the sherry vinegar and olive oil in a small bowl and whisk to emulsify. Season with salt and pepper to taste.
Combine the rest of the ingredients in a large bowl, add the dressing and toss gently to combine.
