Blueberry Balsamic Sauce
1 tablespoon OLIVE & VINE extra virgin olive oil
1 tablespoon butter
2 shallots, thinly sliced
1/2 cup OLIVE & VINE Summer Blueberry balsamic vinegar
1/3 cup maple syrup
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon chopped rosemary
Heat the olive oil and butter in a saucepan over medium-low heat. Add the shallots and saute until soft. Add the blueberries and stir for about a minute. Add the balsamic vinegar, maple syrup, rosemary and the rest of the salt and pepper. Raise the heat to medium and simmer for about 10 minutes or until the blueberries start to collapse.
Serve over chicken or pork.
