Scalloped Sweet Potatoes and Apples
6 sweet potatoes
1 1/2 cups apples, peeled, cored and sliced
1/2 cup brown sugar
1/2 teaspoon salt
1 teaspoon nutmeg
1/4 cup butter
1/2 cup OLIVE & VINE Warm Cinnamon Pear balsamic vinegar
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
Place sweet potatoes in a large pot with enough water to cover and bring to a boil. Boil until tender, then cool, peel, and cut into 1/4 inch slices.
Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer half of the apples over the sweet potatoes.
In a small bowl, mix together brown sugar, salt, nutmeg and half of the balsamic vinegar. Sprinkle half of the mixture over the apple layer. Dot with half the butter.
Repeat layers of sweet potato and apple, and top with remaining brown sugar mixture and butter. Bake in the preheated oven for 50 minutes or until apples are tender. Drizzle the remaining balsamic on top.
Optional: reduce the remaining balsamic vinegar by simmering over low heat until it thickens slightly. This will add a syrupy texture to your dish.
