Meyer Lemon Gazpacho

1/4 cup OLIVE & VINE Meyer Lemon EVOO
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 tablespoon paprika
1 teaspoon sea salt
1-1/2 pounds tomatoes, cored and chopped
1 small cucumber, peeled and chopped
1 red bell pepper, seeded and chopped
1/2 jalapeno, seeded and minced
1/4 cup fresh cilantro, finely chopped
1/4 cup fresh parsley, finely chopped

Place all ingredients in a food processor and pulse until well chopped but not pureed.  Cover and refrigerate for at least 2 hours before serving.

Makes 4 servings.
