Summer Grilling Ideas



Spicy Chipotle Marinade
 (good with beef, pork & chicken)

2 tablespoons OLIVE & VINE Smoky Chipotle EVOO
2 tablespoons OLIVE & VINE Jalapeno Piquant Balsamic Vinegar
1 1/2 tablespoons Galena Garlic Company Smoked Paprika Chipotle Seasoning

For each pound of meat, combine these three ingredients in a gallon size plastic bag with your selected cut of meat and place in the refrigerator for at least 2 hours for pork and chicken, and 1 hour for beef, before grilling.

Cinnamon Chili Pepper Dry Rub
(good for chicken & pork)

2 tablespoons OLIVE & VINE Rich Roasted Garlic EVOO
2 tablespoon Galena Garlic Company Cinnamon Chili Pepper Rub

Pat your meat dry to remove surface moisture. For each pound of meat, coat generously with extra virgin olive oil then evenly cover the meat with the dry rub by pressing it evenly onto the surface of the meat.  Marinate in refrigerator for at least 3 hours prior to grilling.

Italian Grilled Vegetables

1/4 cup OLIVE & VINE Tuscan Bouquet EVOO
2 tablespoons Galena Garlic Company Italian Seasoning
3 tablespoons OLIVE & VINE Traditional Balsamic Condimento

Chop 6 cups of mixed fresh vegetables (i.e. zucchini, yellow squash, red, yellow and/or green bell peppers, eggplant, onion, mushrooms) into bite size pieces. Slide the vegetables onto skewers and place the mushrooms on a separate skewer since they will cook much faster than the vegetables. In a baking dish, drizzle Tuscan Bouquet extra virgin olive oil over the skewered vegetables and mushrooms until evenly coated. Sprinkle Italian Seasoning  on the skewered vegetables and mushrooms. Cook the vegetables on a hot grill turning frequently until they are tender crisp. The vegetables will take 5-10 minutes depending on how hot your fire is. The mushrooms will only take a 1-2 minutes to cook. Slide the vegetables and mushrooms from the skewers into a serving bowl and drizzle with Traditional Balsamic Condimento before serving.



1/2 cup OLIVE & VINE Rich Roasted Garlic EVOO
1/2 cup soy sauce 
2 tablespoons fresh ginger, grated
Wisk together all ingredients in a bowl.  Place in a large ziploc bag with up to 3 pounds of meat, chicken or vegetables.  Refrigerate for 1-2 hours before grilling.
