Substituting EVOO for Butter

Substituting extra virgin olive oil for butter dramatically cuts the cholesterol and saturated fat content of  dishes that call for butter in frying or sauteing. When substituting olive oil for butter in baked goods, you generally need less olive oil than butter. The Butter to Olive Oil Conversion Chart provides a basic guide for adapting recipes.  Keep in mind though that it's not always a good idea to substitute a liquid fat for a solid fat in baking.  For example, butter and powdered sugar make a great cake frosting but olive oil and powdered sugar do not!
